Getting Your Wedding Dessert Right is a Piece Of Cake

I don’t believe that I am the only person who has gone to a wedding, loved the food, loved the wine, enjoyed a mini food feast in my mouth, and then had a slice of the wedding cake… and suddenly, a marzipan nightmare comes crashing down; thick layers of hardened paste infused with sugar and almond, draped over a suffering sponge that is dry and completely devoid of flavor.

Now, don’t get me wrong - the cake looks incredible; it is pronounced and flounced with flowers frozen in time; it has been dipped in gold and silver and shinning like a miniature castle for all the guests to see. But the design seems to be the only thing that received any attention - apparently the flavor had to suffer the burden of being snubbed.

A Taste Revivial:

Luckily, the days of the stunning, yet tasteless wedding cakes are slowly coming to an end. Bakeries and pastry chefs around the world seem to have discovered the importance of taste and found the balance between facade and flavor. Not only has this association found more relevance, but more creativity in the design and style of the cake seem to have surfaced as well.

Some Modern Twists:

One such innovation is the use of cupcakes - so the top tier of the cake is a solid, round piece, with the marzipan and the extravagant decoration to go with it; therefore everyone is able to see the mastery of the cake, as well as the fact that it creates a platform to show off how the style of the cake suites the style of the wedding. Then all the tiers below are cupcakes - decorated to the same style, but they are small and iced with cream or meringue, or any other delicious topping that allows the tiny cup to become a real treat and delicious delight. This also allows for the tradition of the bride and groom cutting the cake to continue, but then makes the rest of it easy because all they need to do is assign a cupcake to a guest- and Voila! Sugary enchantment!

A Thing of Beauty:

Another means to keep the cake looking beautiful but tasting great is using actual items for decoration. Therefore the cake doesn’t have to have that stiff outer icing, it can be made fluffy and soft and different objects can be placed delicately between it’s folds - actual flowers, beads, feathers, lace or shells. This allows the cake to reflect the theme and the makers can get even more creative with the colours they use and real-life articles that litter the cake.

A wedding cake is an important centerpiece to any Western wedding; it is a sugary symbol of the coming together of two people as they embark on life’s journey as one. So lets make it beautiful and glorious and place the importance on it that it deserves - but hell, lets make it a little tasty as well. Remember, people are going to be eating this thing.
